The award-winning chef behind Ortanique on the Mile in Miami, and Ortanique in Grand Cayman, and her partner Delius Shirley have developed a menu that is unique and uniquely Harbour Island.
The islands are in Cindy’s heart, so she is delighted to bring regional and Bahamian cuisine to guests and visitors to The Dunmore. Her partner, Delius Shirley, was raised on fine, island dining. His mother, Norma Shirley, is regarded as the Julia Child of the Caribbean, so he continues to celebrate her legacy by bringing exceptional regional cuisine to The Dunmore.
With Cindy’s talent and dedication, and Delius’ innate ability to create a memorable dining experience, The Dunmore has become one of the most sought-after Harbour Island restaurants.
Our restaurant is open to the public for lunch and dinner. Dinner reservations are required.
